What are the symptoms of a food-borne illness?

Symptoms of a food-borne illness vary somewhat, depending on which microorganism caused it, but usually include nausea, vomiting, and diarrhea.

Length of time from infection to the first symptoms varies greatly. Sometimes symptoms are seen in a few hours and sometimes they aren't seen for 72 hours (three days). This depends on the type of infection.
